Today we’re talking about unrequited love. Specifically, the kind of unbridled passion that leads a person to create a vegan dip replacing a long-lost, but not forgotten desire for a less than healthy, less than vegan dip. I know we all have our own version of guilty pleasures, this dip just takes the guilty out and focuses on the pleasure part!
If you’re not familiar with the Seven Layer Salad it begins with a layer of lettuce, followed by green onions, frozen peas, boiled eggs, bacon bits, cheddar cheese, and topped with my mom’s secret mayo dressing. That’s a lot of layers vegans cannot eat. Remove the eggs, cheese, and mayo dressing, and you’re left with a 4-layer salad. Nothing to get too excited about.
But I’ve developed a vegan version of this recipe that is just as delicious as the original. See if you agree why we call it perfect!
I guess they got their name from the quick and easy way you eat them but I like these Vegan Baked Jalapeño Poppers because, well, they’re vegan! Fresh jalapeños filled with delicately flavored vegan cheese, coated with bread crumbs and baked until tender on the inside, crispy on the outside. It’s definitely a formula for what I like to call…happiness!
