  2. Add coconut oil and agave nectar and pulse again.
  3. Add frozen raspberries and let this sit for several minutes to soften.
  4. Pulse until the raspberries are broken down. 
  5. Test the batter for sweetness and texture.
  6. Use a cookie scoop to portion the batter into equally-sized bites.
  7. Roll balls in shredded coconut.

Ingredients

  • 1 cup rolled oats
  • 1 tablespoon ground flaxseed
  • ½ cup almond flour
  • ¾ cup shredded coconut, divided
  • 2 tablespoons coconut oil melted
  • 3 tablespoons agave nectar
  • ¾ cup frozen raspberries

  • Combine oats, flax, almond flour, and ½ cup of shredded coconut in a food processor. Pulse in short bursts until combined and broken down into small bits.

      Hi Kat. There must have been a glitch in the recipe card, because coconut oil is showing for me. The recipe calls for 2 tablespoons. Hope this is helpful!
