Recently I’ve been mulling a new saying, health over flavor. That’s because I realize most of my days I’m looking for a balance between the two. We’ve all tasted food that tips the scale on the “healthy” side. It doesn’t usually leave us wanting more. And I’ve tipped the scale when I’ve opted for too much flavor.

What bananas are best for banana bites?

I recommend using ripe bananas that have a few or several brown spots. However, they should be firm and not “soggy”.

How to Make Frozen Bananas Bites

  1. Slice the bananas into 1/4-inch slices, keeping them as level as possible.
  2. Make banana “sandwiches” by topping a banana slice with peanut butter, and placing another banana slice on top.

  3. Place banana sandwiches on a tray and place them in the freezer for 10 or 15 minutes.
  4. Melt chocolate chips with coconut oil in a microwave-safe bowl and stir until smooth.

  5. Dip each banana “sandwich” in the melted chocolate and then place them on a waxed paper-lined tray. 
  6. Freeze chocolate-coated banana bites for 10 to 15 minutes. Then transfer the bites to a freezer bag.

Storage Tips

Keep the frozen banana bites in a freezer-safe container or bag in the freezer for up to 2 months. It may help to let them sit at room temperature for a minute or so before consuming.

Ingredients

  • 3 medium bananas , peeled and sliced

  • 1 cup dairy free chocolate chips
  • 1 tablespoon coconut oil

Instructions

  • Slice the bananas into ¼-inch slices, keeping them as level as possible. Top one of the banana slices with a generous amount of peanut butter, and place another banana slice on top (like a sandwich). Place these on a tray and place in the freezer for 10 or 15 minutes.
  • Combine chocolate chips and coconut oil in a microwave-safe bowl and heat for 30 seconds. Let that sit for a minute and then stir. You may need to repeat this process until the chocolate is melted.
  • Place a piece of waxed paper on a tray that will fit in your freezer. Dip each banana "sandwich" the melted chocolate and then place them on the tray.
  • Once all the bananas are coated in chocolate, return the tray to the freezer for 10 to 15 minutes. Then transfer the bites to a freezer bag and store them in the freezer for up to 2 months.

      As long as you keep them in the freezer they can remain stored for quite awhile. I would say at least a month, possibly two. The thing is, they’re so good to eat…you probably won’t need to!

    would the recipe still turn out as delicous as they look if one used 2% instead of soy milk?

      Hi Madalyn – I’ve been vegan for nearly 5 years now so the flavor of cow’s milk tastes sour to me. If you don’t want to use soy milk, there are also great almond milk or coconut milk products you can use. In fact, you don’t have to use any milk at all for this recipe. I hope this helps!
