It’s the first week of the new year and you know what that means? Resolutions! Diets! Getting Fit! Netflix! Well, it is kind of cold outside right now. Anyway, I wanted to share with you my favorite easy vegan healthy recipes for the new year because just because you’re getting healthy doesn’t mean you have to spend unnecessary hours in the kitchen. No way!

Did I tell you that Shawn’s new year’s resolution was to eat less sugar? I was like, yay…but not enthusiastically. Because, well, you know. I like sugar. But he has a point. It’s good to always be adapting. That’s what we humans are great at!
So, we are adapting to this less refined sugar life and I’m loving it! I will have more recipes to share with you soon. But for now, take a look at some of our favorite easy vegan healthy recipes!

There’s no better way to get your greens (and we need a LOT of them), than with a smoothie. At least that’s my humble opinion. This smoothie makes you forget all about the greens because of all that banana goodness!
There is no doubt that I love my chai tea. So having a little bit of it in my morning muffin is a bonus. I recommend serving this with a cup of chai tea as well. All of our baked goods are cholesterol free because we don’t bake with eggs. Instead we use ground flax seeds which adds some Omega-3s to your diet.
Vegan’s don’t have to give up scrambles for breakfast, we just use tofu instead. If you haven’t tried tofu before and you’re thinking this sounds kind of strange, just trust me. Follow this recipe for a delicious scramble that we serve on repeat here in our house!
Chocolate and peanut butter combine for something even better than dessert! Did I just say that? I did! Anyway, this smoothie is rich in protein and other healthy plant-based nutrients!

In my category of “vegans can have it all” is this Mock Tuna Salad. I serve it on bread when I’m in sandwich mode, but it’s nice on a salad as well. If you’d like a gluten-free “sandwich” serve it soft taco-style on a corn tortilla. My favorite serving tip? Add a little sriracha on top. Great stuff!
I was at a conference once when I first learned that you could use steamed green beans in place of spaghetti. This dish was so good that I had to go home and recreate it. This is one of my favorite go-to recipes when I’m wanting uber healthy, but also super flavorful as well!
We took healthy to another level with the Vegan Sushi because we made it with cauliflower rice. I didn’t know what to expect using cauliflower rice instead of rice, but I actually loved it. Cauliflower is a cruciferous vegetable and you know, there’s no end to the list of goodness it brings to your life!
I think I had rice papers in my fridge for about a year before I actually tried them. That’s just how hesitant I am about new things. But once I finally gave them a go, I loved them! These tasty spring rolls are a perfect way to get your veggies in while still feeling satisfied!
This sandwich is so easy and flavorful! I could definitely see packing this in a lunch and eating it in front of everyone while they unpack their peanut butter and jelly. These vegan chicken patties are topped with vegan bacon and sliced avocados for extra goodness! Use thin buns to reduce the calories or even wrap it in lettuce for gluten-free!

I love taking a bowl of this dip to my book reading club meetings along with a bag of baked tortilla chips. It’s not only healthy, but delicious. Everyone always agrees!

I have loved the flavor of peanut butter and chocolate together ever since I could remember. One day I decided to put the two together in a super healthy peanut butter cup. This recipe is not only naturally sweet, it’s filling too!
It took me a little while to warm up to the date, but once I got used to them, I really love them! This vegan caramel date sauce is perfect to have on hand! Serve it over your oatmeal or drizzled on some vegan ice cream. It’s a great, natural, healthy snack!
This recipe is an example of how healthy can be so rich and decadent. I love macaroons and now I get to have this plant-based version, without any eggs or dairy products. Another thing I love is that they’re so rich, it’s easy to have only one and then you’re nice and satisfied afterwards!
These black bean browns are another example of a healthy, vegan dessert. This recipe uses a full can of black beans along with coconut oil. It’s a rich, fudgy, delicious dessert!

Hibiscus is so good for you. I learned this from Dr. Greger of the site Nutrition Facts. I also talked with Dr. Greger on the Namely Marly Podcast about his book, How Not to Die. As a result I try to drink this punch on a regular basis, and it’s not too hard to do. It tastes just like Hawaiian Punch to me so knowing that I’m getting lots of antioxidants is just a bonus!
Another thing Dr. Greger mentioned in my podcast interview is the benefits of cocoa powder. I loved sharing with him my favorite drink – a hot cup of green tea mixed with a teaspoon of cocoa powder. Of course I add some stevia for sweetener and a little bit of steamed plant-based milk. It’s like a skinny cup of hot cocoa, full of phytontruients. Shh. I won’t tell anyone if you won’t!
Speaking of hibiscus, we made these Hibiscus Margaritas because I’m kind of picky about my cocktails. I don’t like them overly sweet. This hibiscus margaritas mix is perfect, if you ask me. The hibiscus adds a tart flavor and with the minimal sugar used, it’s a great healthy, delicious cocktail!
