Last night I dreamed of Paris. Of course, as per usual in dreams like this, I found myself euphoric to be in a plane touching down in Paris and then soon after panic-stricken when I realized I had forgotten to pack. I didn’t have a suitcase or anything. What a dilemma to be so happy and so full of anxiety all at the same time!

Dreams. They can be so perplexing.

But how perfect is it that I dreamed of Paris last night and today’ I’m sharing parfaits? Ooh la la!

But there’s something else perfect about today. That’s because today I’m celebrating my friend Courtney, of the blog Neighborfood, who just had her first baby. Let’s all say it together: Ahhh.

And so a few of her food blogger friends are chipping in to line up some posts for her so she can take some time with baby before returning to her crazy life as a food blogger!  Everyone deserves time with their baby before getting back to reality!

What better way to say Welcome Baby than by making a simple, healthy parfait?

Well, I can think of a few ways to welcome a baby, like cleaning her house, doing the laundry, or maybe even helping out with the diapers. But then I thought parfaits had a nice ring to it. 🙂

Besides these Blueberry Peach Coconut Parfaits are layered with my new favorite Coconut Whipped Cream. It really is a super easy dessert to make, and with layers of blueberries (combined with chia seeds) and peaches, you’ll taste healthy and delicious in each and every bite!

  • 1 cup blueberries
  • 2 tablespoons chia seeds
  • 4 tablespoons water
  • zest of one lemon
  • 1 recipe Coconut Whipped Topping
  • 1-2 medium peaches thinly sliced and chopped
  • Top with almond slivers or mint sprigs


  • Place the blueberries, chia seeds, water, and zest of one lemon in a small bowl. Stir gently to combine. Set aside for about 25 minutes to allow the chia seeds to create a gel from the liquid.
  • When the blueberries are ready, spoon some of the Coconut Whipped Topping into the bottom of each dessert dish. Top with a layer of the blueberry mixture, spreading it evenly across. Follow that with another layer of Coconut Whipped Topping. Then add a layer of sliced peaches and top with another layer of the whipped topping.
  • Adorn the top with some almond slivers or mint sprigs.
  • Refrigerate until ready to serve.
