When you’ve got a hectic day ahead this easy Tofu Sandwich can get you started on the right foot. Or the left foot. Whichever gets you started out right!

My daughter, Adee, had a hectic day in front of her today so I decided to make her something a little extra special. She loves my fried tofu sandwiches, but this time I made it on french toast. Heavens to Betsy, it was a winner!

So I decided to take a quick little detour from my planned cleanse diet post and share with you this tasty sandwich.

How to Make Tofu Sandwich

It’s so easy to make this tofu sandwich recipe. Of course, I wanted to make this tofu sandwich vegan so be sure to use dairy free bread. Also, I’m transforming that bread into “French Toast” bread slices, however, you can use simple toasted bread if you prefer.

Step One: Make Vegan French Toast

First, let me say that you don’t have to make Vegan French Toast here. You can simply toast 4 slices of bread and this will be a very tasty tofu sandwich. However, if you have the time and inclination the French Toast does add a little something as the French say, je ne sais quoi! It’s just special!

So, begin by combing the milk, maple syrup and cornstarch in a bowl and stir until well combined. 

Next, place the coconut oil in a skillet over medium heat. 

While the skillet is heating up, lay one piece of bread in the milky mixture and let it set for a few seconds to absorb the liquid. Turn the slice over to make sure both sides are saturated. Place in the skillet. While that’s cooking place another piece of bread in the remaining milk mixture, turning to allow both sides to become saturated. Place it in the skillet. Repeat with all the bread slices.

Cook bread slices fo 3 – 5 minutes until lightly browned. Flip the french toast slices. Once the other side is lightly browned, place them on prepared pan and bake for 10 – 15 minutes, until firm.

Step Two: Make Fried Tofu

If you’re wondering how to cook tofu for sandwiches, it’s pretty straight forward. First, press the extra firm tofu using a tofu press. If you don’t have a press, wrap the tofu in a kitchen towel and place on a plate with something heavy over the top (like a pan or can) and let that sit for 30 minutes or so to press out some of the liquid. Slice tofu into 1/2 inch slices.

Note: Add liquid smoke or smoked paprika to make this into a smoked tofu sandwich recipe! Or, add a teaspoon of chili powder to make a spicy tofu sandwich!

Next, heat oil in the skillet over medium heat. Place tofu slices on skillet.

Add seasonings to a bowl and stir to combine. Sprinkle seasoning mix over top of tofu slices. Continue to cook the tofu slices until lightly browned on the bottom, 7 – 10 minutes. Flip slices and cook on the other side until lightly browned. Transfer to a plate lined with paper towels.

Step Three: Sandwich Assembly

To assemble the vegan tofu sandwich, spread mayo on two toast slices. Top those slices with two pieces of tofu. Add greens, onion, and top toast slices.

Ingredients

Vegan French Toast

  • 3/4 cup plant-based milk
  • 1 tablespoon maple syrup
  • 1 1/2 tablespoons cornstarch
  • 4 slices vegan bread
  • 1 tablespoon coconut oil

Fried Tofu

  • 4 ounces extra firm tofu
  • 1 teaspoon coconut oil
  • 1/2 teaspoon turmeric
  • 1/2 teaspoon dried sage
  • 1/2 teaspoon salt
  • 1 tablespoon smoked paprika

Sandwich Assembly

  • 2 teaspoons vegan mayo
  • 1/2 cup greens
  • 2 slices red onion

Instructions

  • Preheat oven to 300F. Line a baking sheet with parchment paper.
  • Combine the milk, maple syrup and cornstarch in a bowl and stir until well combined. 
  • Place coconut oil in a skillet over medium heat.
