Pan Seared Bananas and Chocolate Vegan Grilled Cheese Sandwich

The year is more than half-way over and my list of things to do this year is lacking a few key checkmarks. Add to that the fact that my baby is starting her senior year in high school in two weeks. It’s all led me to a sort of mild anxiety disorder. The best cure I know for anxiety is chocolate. But, let’s face it, I can’t have just any chocolate…it has to be dark chocolate. And when dark chocolate is the remedy of choice, it needs a little accompaniment. It was in this shallow pit of my feeble-minded unease when I came up with this recipe for Pan-Seared Bananas and Chocolate Grilled Cheese Sandwich. Vegan Grilled Cheese, of course. I know we usually give credit to the dark, brooding crazies for true creative talent, but this sandwich is testament to that fact that even some mild angst can create genius.

It’s time for another one of my true confessions. I haven’t always been vegan. I haven’t always been vegetarian for that matter. When I was a teenager, my favorite after-school snack was sliced bananas and cheddar cheese. I just thought the two flavors together were divine.

I’ve missed that some since going vegan, but now it’s back in my life since I learned I can combine bananas with vegan cheese.

All is well with my world again.

Chocolate Vegan Grilled Cheese Sandwich

This may be my new favorite after school snack…that is if I were still in school. I think with a master’s degree on my belt, I might be done with formal education.

But, of course, I’m always in learning mode. If learning means education and that connects me with an afternoon snack? I might become an eternal student of life!

I have to do these tricks to motivate myself sometimes.

Motivation and anxiety relief all in one bite. Not too bad a cure, if you ask me.

How to Make Pan-Seared Bananas and Chocolate Grilled Cheese Sandwich

Use these ingredients to make these vegan sandwiches:

  • banana
  • vegetable oil
  • vegan butter
  • crusty bread
  • Vegan Provolone Style Cheese Slices
  • dairy-free dark chocolate

Follow these steps:

Heat a large skillet over medium heat, add the oil and banana slices and sauté until seared. Flip the bananas and sear on the other side. Remove the seared bananas from the pan to a plate. Set aside to cool.

Slather one side of two slices of bread and place them in the warmed skillet “buttered” side down. On top of that slice of bread add a slice of the Daiya Provolone Style Cheese Slice, one or two pieces of dark chocolate, and the pan-seared bananas and top with another slice of cheese. Slather another slice of bread with margarine and place that slice, “buttered” side up on top of the cheese.

Cook for 3 – 5 minutes to allow the bread to turn a nice golden color. The cheese should be just starting to melt as well. Carefully flip the sandwich and cook the other side.

Remove from the pan and be ready to eat it right away. Do I really need to say that? One look and you’ll be ready to dive in!
