Roasted Cauliflower Pasta with Walnuts and Basil

This Roasted Cauliflower Pasta recipe is made with cauliflower florets cooked in a garlicky butter sauce with walnuts, tomatoes, and fresh herbs. This pasta with cauliflower is a simple, healthy vegan dinner. Cauliflower pasta recipes make an elegant, but simple vegetarian pasta dinner perfect for entertaining or weeknight dinners.

This cauliflower spaghetti is a tasty way to serve dinner any night of the week because it’s so healthy. You may be used to the more traditional pasta recipes, liked vegan baked ziti or vegan lasagna.

However, there’s lots of ways to serve pasta and the toppings are endless. In fact, this Spaghetti with Cauliflower is one of my favorites thanks to the buttery sauce and tender roasted cauliflower.

How to Make Roasted Cauliflower Pasta

It’s so easy to make roasted cauliflower pasta! I’ve been itching for an excuse to crack out the cauliflower. Serving it over pasta with some walnuts and sliced cherry tomatoes? Well, that just seemed like the only way to go!

Let’s talk about how to make this tasty recipe.

Step One: Cook the Pasta

Cook the pasta in a saucepan of salted boiling water for about 8 minutes, until al dente. Drain, reserving 1/3 cup of the cooking liquid.

Step Two: Pan Roasted Cauliflower

Roasted vegetables are so good because the heat tenderizes the vegetables, making them sweeter and tender. There are many ways to roast vegetables.

For this recipe we’ll be using a process called pan roasting. Pan roasting is exactly as it sounds, using the heat from the skillet to roast cauliflower. We’re going to create the same toasty, roasted effect from the oven, on the stove-top.

To do this, simply heat the oil and vegan butter in a skillet over medium to medium-high heat. Add the cauliflower florets, stirring to coat them evenly. Cook the cauliflower until the florets are slightly tender and golden brown on the edges, about 10 minutes.

Remove from heat, add the reserved cooking liquid from the pasta, chopped garlic, walnuts, and sliced cherry tomatoes. Stir these ingredients around the pan so everything is fully coated. Place a lid over the pan while you plate the pasta.

Step Three: Serving Cauliflower Pasta

Immediately before serving, chop the basil leaves and stir these into the cauliflower mixture along with salt and pepper to taste. Heap generous portions of the cauliflower mixture over both plates of pasta.

Be sure to sprinkle some vegan parmesan cheese on top and serve it with some vegan garlic bread too!

  1. I love the walnuts here – I made a pizza a while back, and as an almost afterthought I added walnuts – SO good.
