A hankering for potatoes recently combined with the not so gentle urging of my daughter resulted in a quest to make Twice Baked Potatoes. My quandary? How to make this traditionally creamy, cheesy dish vegan. I think I found a perfect solution using a healthy and delicious substitute…inspired by a trip to Argentina of all places. These Vegan Twice Baked Potatoes can be enjoyed as a side dish or as a meal itself with a salad on the side. Versatile and tasty!

Orange Poppyseed Muffins

This recipe of Orange Poppyseed Muffins is topped with a glaze I made by combining powdered sugar and orange juice – a tasty twosome if I do say so myself. My muse for this treat was an orange in the fridge that was on it’s last leg. All I can say now, is thank goodness for “day-old” oranges. In the meantime, I’ve also concluded that the orange glaze would taste mighty fine on my Tropical Muffins.

Most everything in life requires work if you want to be good at it. But every now and then you find a sweet spot; something that comes easy. You know, like badminton. Or maybe this recipe for Instant Sangria. It’s not an exact replacement for allowing the flavors of wine and fresh fruit to marinade overnight, but it’s a really close substitute.

Although forethought may not be my strong suit, inventiveness is.

One night I was fixing dinner and thinking to myself, wouldn’t it be nice to be sipping some of that sangria right now? And that’s when the idea hit me. I combined a few of my favorite ingredients and voila! Instant Sangria!

I recently woke to a flat of strawberries at my door. What a great surprise! After exclamations of joy I was immediately struck with a question. What would I do with all these strawberries?

I didn’t know the answer to that on a macro level, but I knew immediately what I wanted to do with a few of those berries that day. Strawberry Smoothies and martini glasses came to mind. Is that a country music song? Either way, something tells me it’s going to be a “berry” good day!

Tropical Muffins

Henry Ward Beecher once said that we ought to carry ourselves in the world, “as an orange tree would if it could walk up and down in the garden, swinging perfume from every little censer it holds up to the air.”

Be the tree! With that in mind I decided to make muffins bursting with the flavor of oranges. These Tropical Muffins are a lightly sweetened combination of orange, banana, and strawberry with an almond meal and orange zest topping.
