I’m obviously into swirly food right now. Last week there was a Swirled Pumpkin Brownie and today, Vegan Swirled Chocolate Chip Cookies. I wonder what that means? It’s Fall and the wind is swirly?  Maybe that’s it. Or maybe there’s something dark and sinister about swirling. Or maybe I think too much…

I dedicate these cookies to my friend Sharon. She died earlier this year and I have to confess that I miss her. Sometimes a lot. Sharon was one of those friends who could sift through the noise of the world and tell you what she thought of any particular issue, without mincing words. And she was oftentimes right.

So, before I get too sentimental — something she would have hated like the plague (although I’m pretty sure I never asked her thoughts on the plague) —let me tell you this little poem that Sharon loved to recite:

I am a girl
with a swing and a twirl

There’s more to the poem, and there was a bit of controversy about its origins, but the most endearing part was how Sharon used to walk around reciting it while flipping her hair this way and that. She was completely uninhibited at times…another endearing trait.

Now I can’t say the word “twirl” (or even “swirl” for that matter) without thinking of her. And it always makes me smile.

So even though she deserves much more than cookies for her dedication, these twirly cookies will have to do. And I think she would have liked them anyway.

Sometimes I know I take things way too seriously. I heard someone say recently that 90% of toddlers are highly creative, but that number slips way down to 2% for adults. I thought about asking the speaker where he got his data, but it made me feel cynical. Most of the time when someone’s spouting data being cynical is appropriate. But somehow, listening to a speaker talk about creativity and imagining most toddlers with a set of water colors, I had a feeling he was right.

Adults can be too dang serious. My solution to creativity and seriousness? Cookies!

Making Vegan Swirled Chocolate Chip Cookies

I make these Vegan Swirled Chocolate Chip Cookies in two separate bowls. To me that seemed easier. You’ll have two separate bowls of cookie dough and then assemble the cookies by rolling the two different-flavored cookie dough balls together.

I love reserving some of the chocolate chips to press some into the tops of the cookie dough balls before baking…that way the cookies have lots of chocolate chips baked right into the top.

Ingredients

Chocolate Chocolate Chip Cookies

  • ½ cup Vegan Butter , softened
  • ½ cup Sugar
  • 1/2 cup Brown sugar
  • 1 tablespoon Ground flaxseeds
  • 1 tablespoon Cornstarch
  • 3 tablespoons Water
  • 1 teaspoon Apple cider vinegar
  • 1 teaspoon Vanilla
  • 1 cup All-purpose flour
  • ½ cup Unsweetened cocoa powder
  • 1 teaspoon Baking soda
  • ½ teaspoon Salt
  • 2 tablespoons Plant-based milk
  • 1 cup Dairy-free semi-sweet chocolate chips

Chocolate Chip Cookies

  • ¾ cup Vegan butter softened
  • ¾ cup Brown sugar
  • ¼ cup Sugar
  • 1 tablespoon Ground flaxseeds
  • 3 tablespoon Cornstarch
  • 3 tablespoons Water
  • 1 teaspoon Apple cider vinegar
  • 1 teaspoon Vanilla
  • 2 cups All-purpose flour
  • 1 teaspoon Baking soda
  • 1 teaspoon Baking powder
  • ½ teaspoon Salt
  • 2 tablespoons Plant-based Milk
  • 1 cup Dairy-free semi-sweet chocolate chips

Instructions

For the Chocolate Chocolate Chip Cookies:

  • In a large bowl cream together the margarine and sugars using a mixer on medium-high speed until light and fluffy. Be sure to scrape down the sides from time-to-time. Beat in the ground flax seeds, corn starch, water, apple cider vinegar, and vanilla. Mix for another minute.
  • Move the contents over to one side of the bowl. On the other side combine the flour, cocoa powder, baking soda, and salt. Stir these ingredients together and then add to the wet ingredients, using the mixer to combine. Add the non-dairy milk, one tablespoon at a time. Stir in 1 cup of the semi-sweet chocolate chips.

For the Chocolate Chip Cookies:

  • In a large bowl cream the margarine and sugars with a mixer on medium-high speed until light and fluffy. Scrape down the sides from time-to-time. Beat in the flax seeds, corn starch, water, apple cider vinegar, and vanilla. Use the mixer to blend these ingredients together until light and fluffy.
  • Move the contents over to one side of the bowl. On the other side combine the flour, baking soda, baking powder, and salt. Stir these ingredients together and then add to the wet ingredients, using the mixer to combine. Add the non-dairy milk, one tablespoon at a time. Stir in 1 cup of the semi-sweet chocolate chips.
  • Cover both bowls of cookie dough with plastic wrap and chill in the fridge for at least an hour. If you chill them longer you'll get a thicker cookie, which can be kind of tasty.

Assemble the Cookies

  • Heat your oven to 350F degrees and place a sheet of parchment paper on a cookie sheet.
  • Use a cookie dough dispenser to measure out dough balls of all the Chocolate Chocolate Cookie Dough. Clean the cookie dough dispenser and repeat this process with the Chocolate Chip Cookie Dough.
  • Roll the dough into balls and using one dark chocolate and one regular cookie dough ball, press the two balls together and roll them between your hands to make one large ball. Repeat this until all the cookie you're out of cookie dough balls.
  • Place the swirled dough balls onto your prepared cookie sheet, allowing 2" between each. Bake for 9-10 minutes in the prepared oven. When the cookies are done, remove them from the oven and allow them to cool for a minute or two before transferring to a wire rack to cool.
