This plant-based Just Egg Quiche is filled with veggie bacon, spinach, and vegan cheese. It's a perfect brunch dish!

Vegan pie crust Just Egg Baking powder Flour Salt & Pepper Frozen chopped spinach Veggie bacon Green onions Vegan cheddar

What you need:

Add parchment paper and pie weights to a crust and pre-bake

Pour Just Egg into a bowl

Add flour, baking soda, and seasonings. Whisk to combine

Add squeezed spinach, veggie bacon, and green onions

Sprinkle vegan cheese over the top

Pour the plant-based egg mixture evenly over the quiche

Bake and let sit for a few minutes before cutting into slices and serving
