There's something  magical about how a simple roast can transform ordinary veggies into a masterpiece of flavor and texture. 

What You Need

Bell Peppers Zucchini Yellow squash Carrots Red onions Cherry tomatoes Broccoli florets Lemon juice Spices Tahini (or olive oil) Soy sauce

Prepare the vegetables by cutting them

Drizzle sauce over chopped veggies

Stir to combine

Transfer veggies to a pan lined with parchment paper

Bake until tender, stirring the veggies half way through
