Pour olive oil into a large skillet over medium-high heat. Add vegan chicken patties and cook until browned on both sides. Transfer to a plate and cover with a lid to keep warm.
In the same skillet, add the onions and cook until tender, about 3 minutes. Add the wine to the skillet and use that to help scrape up browned bits on the pan.
Add the broth, water, and jam to the skillet. Stir to combine. Add more jam or water to create the desired consistency.
