Place the blueberries, chia seeds, water, and zest of one lemon in a small bowl. Stir gently to combine. Set aside for about 25 minutes to allow the chia seeds to create a gel from the liquid.
When the blueberries are ready, spoon some of the Coconut Whipped Topping into the bottom of each dessert dish. Top with a layer of the blueberry mixture, spreading it evenly across. Follow that with another layer of Coconut Whipped Topping. Then add a layer of sliced peaches and top with another layer of the whipped topping.
Adorn the top with some almond slivers or mint sprigs.
