Ingredients

Rainbow French Fries

  • 1 red beet
  • 1 sweet potato
  • 5 whole orange carrots or about 10 carrot sticks
  • 3 whole yellow carrots found out our local health food store
  • 4 small purple potatoes
  • 1 tbsp olive oil
  • 3 tbsp cajun seasoning recipe listed below
  • 1 tbsp dill dried or fresh
  • salt to taste

Homemade Cajun Seasoning

  • 4 tsp paprika
  • 2 tsp garlic powder
  • 1 tsp cayenne pepper
  • 1 tsp black pepper
  • 1 tsp onion powder or chopped onion
  • ½ teaspoon salt

Avocado Cilantro Mint Aioli

  • ½ avocado
  • ¼ cup vegan mayo
  • ¼ cup chopped cilantro
  • ½ tablespoon agave nectar
  • 1 teaspoon chopped mint
  • ½ teaspoon salt

Instructions

Rainbow French Fries

  • Preheat oven to 350F.
  • Cut all vegetables into long sticks that are similar to a traditional french fry shape. Some will be shorter or longer than others. I kept mine at about 2-3 inches long.
  • On a baking sheet, put a thin layer of olive oil or spray cooking oil to coat the sheet.
  • Place veggies on baking sheet, allowing a little space between each fry.
  • Drizzle olive oil over the top of the fries.
  • Sprinkle Homemade Cajun Seasoning and dill evenly over the fries.
  • Bake for 15-20 minutes, or until all fries are tender on the inside and crispy on the outside.
  • Let stand for 5 minutes to cool slightly, then add salt to taste.

Cajun Seasoning

  • Combine all ingredients in a container, mix well.

Avocado Cilantro Mint Aioli

  • Empty avocado into a bowl, and mix with a fork until smooth.
  • Combine remaining ingredients, until a creamy consistency is reached.
  • Use as dipping sauce for french fries!
