Cut all vegetables into long sticks that are similar to a traditional french fry shape. Some will be shorter or longer than others. I kept mine at about 2-3 inches long.
On a baking sheet, put a thin layer of olive oil or spray cooking oil to coat the sheet.
Place veggies on baking sheet, allowing a little space between each fry.
Drizzle olive oil over the top of the fries.
Sprinkle Homemade Cajun Seasoning and dill evenly over the fries.
Bake for 15-20 minutes, or until all fries are tender on the inside and crispy on the outside.
Let stand for 5 minutes to cool slightly, then add salt to taste.
Cajun Seasoning
Combine all ingredients in a container, mix well.
Avocado Cilantro Mint Aioli
Empty avocado into a bowl, and mix with a fork until smooth.
Combine remaining ingredients, until a creamy consistency is reached.
