Chocolate-Covered Trail Mix Clusters

Ingredients

  • 2 cups pretzels broken into pieces
  • cups peanuts chopped
  • 1 cup dried cherries chopped
  • 2 cups vegan marshmallows
  • 2 cups dairy-free chocolate chips divided
  • 1 teaspoon coconut oil

Instructions

  • Prepare a pan by placing a piece of waxed paper over the top of it.
  • Place pretzel pieces, peanuts, cherries, marshmallows, and a half cup of the chocolate chips in a bowl. Stir to combine.
  • Place the remaining 1½ cups of chocolate chips in a microwave-safe bowl with the coconut oil. Stir to coat the chocolate chips and then place in the microwave and heat for about 30 seconds. Let the chocolate sit for another 30 seconds and then stir. Repeat this step until the chocolate chips are melted.
  • Pour the melted chocolate over the trail mix and stir until everything is coated. Use a cookie dough dispenser to evenly distribute clusters on the prepared baking sheet.
  • You can let the chocolate set on the counter until firm, or speed things up by putting it in the fridge.

Notes

*Mini vegan marshmallows are best, but if all you can find is the large variety (like me), use kitchen scissors to cut the marshmallows into smaller pieces and then coat in powdered sugar so they won't stick together. Voila! Mini Marshmallows!
