Vegan French Toast
3/4cupplant-based milk
1tablespoonmaple syrup
1 1/2tablespoonscornstarch
4slicesvegan bread
1tablespooncoconut oil

4ouncesextra firm tofu
1teaspooncoconut oil
1/2teaspoonturmeric
1/2teaspoondried sage
1/2teaspoonsalt
1tablespoonsmoked paprika

Instructions
Preheat oven to 300F. Line a baking sheet with parchment paper.
Combine the milk, maple syrup and cornstarch in a bowl and stir until well combined.
Place coconut oil in a skillet over medium heat.
While the skillet is heating up, lay one piece of bread in the milky mixture and let it set for a few seconds to absorb the liquid. Turn the slice over to make sure both sides are saturated. Place in the skillet. While that’s cooking place another piece of bread in the remaining milk mixture, turning to allow both sides to become saturated. Place it in the skillet. Repeat with all the bread slices.
Cook bread slices fo 3 - 5 minutes until lightly browned. Flip the french toast slices. Once the other side is lightly browned, place them on prepared pan and bake for 10 - 15 minutes, until firm.
Fried Tofu
Press the tofu using a tofu press. If you don't have a press, wrap the tofu in a kitchen towel and place on a plate with something heavy over the top (like a pan or can) and let that sit for 30 minutes or so to press out some of the liquid. Slice tofu into 1/2 inch slices.
Heat oil in the skillet over medium heat. Place tofu slices on skillet.
Add seasonings to a bowl and stir to combine. Sprinkle seasoning mix over top of tofu slices. Continue to cook the tofu slices until lightly browned on the bottom, 7 - 10 minutes. Flip slices and cook on the other side until lightly browned. Transfer to a plate lined with paper towels.
Sandwich Assembly
Spread mayo on two toast slices. Top those slices with two pieces of tofu. Add greens, onion, and top toast slices.
