Air Fryer Potatoes

Make these herbed-roasted air fryer potatoes as your new favorite side dish. Or serve them as an appetizer with hummus or your favorite vegan ranch dressing.

Ingredients

  • 3 pounds small red potatoes
  • 2 to 3 teaspoons olive oil
  • ½ teaspoon dried thyme leaves
  • 1 teaspoon poultry seasoning
  • ½ teaspoon sea salt
  • teaspoon black pepper

Instructions

  • Heat your air fryer to 400°F/200°C.
  • Cut the potatoes into quarters. Add to a bowl with water and soak for 10 minutes. Use a strainer to drain water. Then use a kitchen towel or paper towels to dry off the cut potatoes.
  • Transfer potato wedges to a plate and drizzle olive oil over the top. Use your fingers to make sure each potato cube is coated in oil. Combine thyme with poultry seasoning in a small bowl. Sprinkle herbs over potatoes. Toss to coat.
  • Transfer oiled/seasoned potatoes to air fryer basket. Cook potatoes for 20 minutes, removing the basket and using tongs to "stir" the potatoes so they're even cooked about halfway through. Cook an additional 2 to 3 minutes if necessary.
  • After the potatoes are done, remove from the air fryer and transfer to a serving dish (or plates) and season with salt and pepper. 

Notes

Air fryer potatoes are made with minimal oil but are nice and crispy. If you want them even crispier, add a little bit more oil before cooking them.
