Vegan Chocolate Peanut Butter Pie

This easy chocolate pie is infused with peanut butter and served in a crispy Oreo crust. If you love the flavor of pie without all the work to make it, this will be your favorite pie!

Ingredients

  • 5.1 oz box Chocolate Cook n Serve Jell-O Pudding*
  • 2 cups plant-based milk vanilla or plain
  • ½ cup creamy peanut butter
  • 1 teaspoon vanilla extract if using plain plant-based milk
  • 1 Oreo pie crust
  • 1 cup coconut whipped cream optional

Instructions

  • Pour the pudding mix into a saucepan. Add the plant-based milk and stir to combine. Turn the heat up to medium and bring this mixture to a light boil. Stirring frequently. Reduce heat and continue cooking and stirring until the pudding becomes thick.
  • Remove from heat and immediately add the peanut butter and vanilla. Stir until combined. If this mixture is too thick, add a little bit more plant-based milk.
  • Allow it to cool slightly and then pour into the prepared pie crust, using a spatula to spread it around equally.
  • Refrigerate for 30 minutes (up to overnight) before serving.
  • Serve with vegan whipped cream (optional, but recommended).

Notes

Both Jell-O Cook n Serve and Oreo Pie Crusts are vegan. **
If your pudding happens to get lump (it happens), don't be distressed. Simply put the finished pudding in a food processor or use a blender and pulse several seconds until smooth.
