Boozy Berry Oreos

Bite into these easy, Boozy Berry Oreos for Valentine's Day and enjoy the sweet, berry-flavored pudding with a punch in the middle of two Oreo cookies.

Ingredients

  • 1 package berry flavored Oreos
  • 3 tablespoons corn starch
  • cups plant-based milk soy, almond, etc
  • ½ cup sugar
  • ¼ - ½ cup vodka

Instructions

  • Twist the Oreos to separate the cookies. Use a butter knife to remove the creamy centers of each of the cookies and place in a small ball.
  • In another small bowl combine ½ cup plant-based milk with the 3 tablespoons or corn starch. Stir to combine. Set aside.
  • In a microwave-safe bowl combine the remaining plant-based milk (1 cup) and the sugar. Stir to combine. Microwave for one minute, and stir to help the sugar dissolve. Pour the cornstarch mixture into the the warm milk. Stir to combine. Return to the microwave and heat in 1-minute increments, stirring between, until the mixture is thickened (about 3 minutes total).
  • Add the pink berry Oreo centers (and any crumbs of the cookies that might have broken in the separation process) and the vodka. Stir to combine. Refrigerate until cool, about 15 minutes.
  • Place a dollop of the pudding mixture on one of the Oreo cookies, about a half a tablespoon. Top with a second cookie and just tap or twist with very minimal pressure to secure it. Repeat with the rest of the cookies. You will probably have some of the pudding mixture leftover. Feel free to serve it in a pretty dish with extra Boozy Berry Oreos. Store these cookies in the fridge. I also froze about half of them and they were great both ways.
