Chocolate-Covered Banana Popsicles

Try this naturally sweet, Chocolate-Covered Banana Popsicle infused with peanut butter and lots of delicious, satisfying flavor! It's a perfect summertime treat!

  • In a food processor bowl, combine the bananas, almond milk, creamy peanut butter, and peanut butter powder. Pulse until the mixture is nice and smooth.
  • Pour the banana mixture into the Zoku Popsicle Molds, distributing equally. Place the popsicle stick/top into each mold. Place in the freezer for approximately 45 minutes, until frozen.
  • Place the chocolate chips and coconut oil in a microwave-safe bowl. Heat for about 30 seconds and then let sit for a minute. The chocolate should be melted. If not, heat for another 11 seconds or so. Stir until smooth.
  • Place a piece of waxed paper over a baking sheet.
  • Next, remove the frozen popsicles from the freezer. Fill a coffee mug about 3/4 of the way with water and heat that up for a minute. One at a time, remove each individual popsicle mold and use the stick to immerse it in the hot water for a few seconds to loosen up the popsicle from the mold. Place the popsicle on the waxed paper. Continue with each popsicle mold, lining each popsicle up on the waxed paper.
  • Use a spoon to drizzle the melted chocolate over the popsicles. Allow the chocolate to sit for a minute (because the popsicles are frozen, the chocolate should set very quickly), and flip them over and drizzle the other side with chocolate as well. Place the pan in the freezer until the chocolate is set.
  • Once the chocolate is set, transfer the popsicles to a freezer bag. Be sure to remove from the freezer for a minute or so before serving, to allow the popsicles to soften a little.
