Vegan Apple Crisp

This simple Vegan Apple Crisp recipe is easy to make and absolutely delicious, especially when served with a dollop or two of vegan ice cream!

Ingredients

  • 6 - 7 medium apples (see note on apples)
  • 1 tablespoon lemon juice
  • cup brown sugar
  • ¼ cup all purpose flour
  • 1 teaspoon ground cinnamon
  • 1 teaspoon pumpkin pie spice
  • ¼ tsp salt

For the Crumble Topping:

  • 1 cup all purpose flour
  • 1 ½ cups rolled oats
  • ¾ cup brown sugar
  • 1 teaspoon ground cinnamon
  • ¾ cup vegan butter melted

Instructions

  • Preheat oven to 350°F. Spray a 9x13 dish or 1.5-quart casserole dish with vegetable spray.
  • Peel the apples and cut them into slices. You should have approximately 8 cups of apple slices. Add slices to a mixing bowl and immediately toss with lemon juice.
  • In a separate bowl, stir together the brown sugar, flour, spices, and salt. Pour this over the apples and toss to coat all the apple pieces. Set aside while you prepare the crumble.

For the Crumble Topping

  • To prepare the crumble topping, stir together the flour, oats, brown sugar, and cinnamon in a mixing bowl. Pour melted butter and stir to combine.
  • Lay prepared apple slices in layers in your prepared dish. Use either a spoon or your fingers to distribute the crumble over the top of the apples. Distribute it equally across the top.
  • Place on a baking sheet and place in the oven. Bake for 50 minutes, until the sides are bubbly and the top is golden brown. Remove from oven and set aside to cool for 15 to 30 minutes before serving.
  • Serve with vegan vanilla ice cream or and vegan caramel sauce.
  • Cover any uneaten apple crisp and store in the fridge for up to 7 days. Apple crisp can be frozen for up to 3 months.

Notes

Regarding Apples. I prefer to use a mixture of apples, mostly green granny smith apples for their tartness and firmness, and yellow delicious for their sweetness and tenderness. Honey crisp is another variety that can be mixed in this recipe.
