This vegan pecan pie is a favorite dessert, thanks to an indulgently-sweet filling infused with pecans!
Vegan Pie Crust
Rum and/or vanilla
What you need:
Prepare the pie crust. Blind bake it or refrigerate.
Cook butter, syrup, cornstarch, and sugar in a pan.
Pour the syrup mixture in with whipped tofu.
Add pecans and pulse in short bursts, leaving some texture
Pour the filling into a prepared pie crust
Add pecans on top of the filling and then bake
Let the pie cool before cutting into slices
Won 3rd place in a pie contest with this!
