  • 1 cup rolled oats
  • 1 cup coconut milk
  • 2 tablespoons unsweetened shredded coconut
  • 1 tablespoon maple syrup
  • 1 pinch sea salt

For the Coconut Overnight Oats

  • Combine overnight oat ingredients in a bowl. Stir to combine. Distribute into serving dishes.

  • Take a taste test. If you prefer it sweeter, add another teaspoon of syrup and stir it in. Repeat until you achieve the desired sweetness.

For the Chocolate Topping:

  • Combine coconut milk and chocolate chips in a microwave-safe container. Cook for 30 seconds. Cover and let it sit for several minutes until the chocolate melts. Stir to create a creamy mixture. Pour evenly over each dish of overnight oats.
