Impossible Burger Meatloaf

Ingredients

  • 2 packages Impossible Ground thawed (1 ½ pounds)
  • ½ cup chopped onion
  • ¾ cup breadcrumbs (see notes)
  • 5 cloves garlic peeled and minced
  • cup tomato paste substitute ketchup
  • 2 teaspoons Italian seasoning
  • 2 tablespoons vegan Worcestershire sauce
  • ½ teaspoon freshly ground black pepper

Ketchup Sauce

  • ½ cup ketchup
  • ½ teaspoon ground nutmeg
  • 1 tablespoon smoke sauce (substitute BBQ sauce)
  • 2 tablespoons brown sugar

Instructions

  • Preheat oven to 400°F/200°C. Line a baking sheet with parchment paper.
  • Add impossible ground to a large bowl. Add the chopped onions and bread crumbs. Stir until combined.
  • Move the impossible meat mixture to one side of the bowl. Add the remaining meatloaf ingredients to the other side of the bowl and stir to combine. Gradually incorporate the sauce in with the rest of the meatloaf.

  • Pour the meatloaf mixture onto the prepared pan and shape into an oblong shape. Bake for 40 minutes.

For the Topping:

  • Combine the topping ingredients and set aside.
  • Once the meatloaf is done, remove the pan from the oven. Drizzle sauce over meatloaf and return it to the oven for another 10 minutes.

  • Let the meatloaf cool for 15 to 20 minutes before serving. It will become more firm as it cools.
