Ingredients

Creamy Oats Base

  • 1 cup rolled oats
  • 1 tablespoon chia seeds
  • 1 tablespoon vanilla protein powder (add sweetener if your protein powder is unsweetened)
  • 1 cup plant-based milk
  • ¼ cup plain vegan yogurt

Raspberry Chia Jam

  • ½ cup raspberries , fresh or frozen
  • 1 tablespoon chia seeds
  • 2 teaspoons maple syrup
  • optional toppings: fresh raspberries, sliced almonds, shredded coconut, maple syrup drizzle)

Instructions

  • Mix the Base: In a medium-sized bowl or jar, combine the oats, chia seeds, and protein powder. Stir together. Add milk and yogurt. Stir well to ensure everything is evenly mixed. Spoon a little bit into the bottom of two serving glasses/jars.
  • Make Raspberry Jam: Gently stir together raspberries, chia seeds, and maple syrup. (If using frozen raspberries, thaw them first)
  • Create Layers: Spoon a little bit of the oats into the bottom of two serving glasses/jars. Spoon some of the raspberry jam over the oats base. Repeat with the remaining oats and then top with the remaining chia jam.
  • Chill Overnight: Cover the jars with a lid or plastic wrap and refrigerate for at least 2 to 4 hours, up to overnight, to allow the oats to soften and the chia seeds to thicken.
  • Serve and Top: When you're ready to serve, add desired toppings, such as fresh raspberries, nuts, or coconut.
  • Enjoy: Serve chilled and enjoy as a quick, nutritious breakfast or snack.
