Perfectly crispy on the outside and tender inside, they’re seasoned with warm spices that remind me of sun-soaked Mediterranean kitchens. Whether I make them in the oven or the air fryer, they disappear almost as fast as I pull the pan out.

- Olive oil – A little goes a long way here. Choose extra virgin olive oil for the richest flavor.
- Salt – I prefer sea salt, but any fine-grain salt works. Add more to taste once roasted.
- Mrs. Dash Southwest Chipotle (Easy Version) – A quick shortcut with lots of bold, smoky flavor.
- Spices (Scratch Version) – Chili powder, smoked paprika, turmeric, and cumin bring warmth, smokiness, and depth. These are pantry staples and easy to find in most spice aisles.

- Skip drying with paper towels—just let chickpeas air-dry in the strainer while the oven preheats.
- Use pre-blended seasoning mixes (like Mediterranean or Chipotle) for faster prep.
- Make them in the air fryer at 390°F for 15–18 minutes for even speedier results.
Recipe Test Kitchen
When I first tested these chickpeas, I tossed them straight from the can into the oven. The result? Soft chickpeas, not crunchy. Drying them thoroughly before roasting made the biggest difference in texture.

Mediterranea Roasted Chickpeas
Ingredients
- 1 15-oz can chickpeas
- 1 ½ teaspoon olive oil
Mediterranean Spice Blend
- 1 teaspoon dried oregano
- ½ teaspoon garlic powder
- ½ teaspoon onion powder
- ½ teaspoon ground cumin
- ½ teaspoon smoked paprik (or regular paprika if you want a milder flavor)
- ¼ teaspoon thyme
- ¼ teaspoon rosemary finely chopped
- ½ teaspoon salt
- ¼ teaspoon freshly ground black pepper
- Easy Version: 1 -2 tablespoons Cavender's Medieterranean Spice Blend (usually available in herbs section of most major grocery stores)
Instructions
- Preheat your oven to 400°F/204°C. Line a baking pan with parchment paper.
- Drain the chickpeas in a strainer, shaking it to remove excess water. Spread the chickpeas out on a paper towel and pat dry. You can also just let them sit out for a few minutes to air dry.
- Pour the olive oil into a bowl and add the chickpeas. Stir until each chickpea is coated with oil.
- Combine the spices in a bowl. Sprinkle over chickpeas, stirring until each is thoroughly coated.
- Easy Version: Sprinkle storebought Mediterranean seasoning over the chickpeas. Stir until thoroughly coated.
- Pour seasoned chickpeas on the prepared pan, spreading them out so they're not touching. Place the pan in the oven and bake for 20 to 25 minutes, until the chickpeas are crispy on the outside.
- Remove the chickpeas from the oven and allow them to cool slightly before adding salt and pepper to taste.
- Air Fryer Mediterranean Chickpeas: Do all the same prep tips, except add the chickpeas to your air fryer basket and cook at 400°F for 10 minutes, shaking the basket about half-way through to "stir" them.
Storage Instructions
- Store roasted chickpeas in a loosely covered container at room temperature for 3–4 days. Avoid airtight containers, which can make them lose their crisp. If they soften, pop them back in a 350°F oven for 5–10 minutes to re-crisp.

How to Make Mediterranean Roasted Chickpeas
Step One: Prep the Chickpeas
Drain and rinse the chickpeas, then pat them dry. This step makes all the difference for crunch.
