How to Make Vegan Sausage Rolls

Step One: Preparation
Preheat your oven to 420°F (210°C) and line a baking sheet with parchment paper. Ensure your puff pastry and vegan sausage are fully thawed before you start.
Step Two: Prepare the Pastry
Place one sheet of puff pastry on a clean, lightly floured surface. Cut the sheet in half, then repeat with the second sheet, creating four long strips of pastry.
Step Three: Mix the Filling
In a mixing bowl, combine the vegan sausage and breadcrumbs. Stir until the mixture is well blended and evenly combined.

Step Four: Fill, Roll, and Slice
Divide the sausage mixture into four even portions. Place one portion onto each strip of pastry, shaping it into a log along one edge of the strip (leave a little room from the edges). See the photo for a visual reference.
Fold the pastry over the filling, overlapping slightly. To seal the roll, dip your finger in water and gently run it along the edge of the pastry before pressing it to close. Flip the roll so the seam is facing down.
Cut each log into six equal pieces (about 1 1/2 inches each), creating 24 rolls in total. Score the tops of each roll with a knife to allow steam to escape while baking.

Step Five: Brush and Bake
For the vegan egg wash, mix vegan butter, plant-based milk, and maple syrup until smooth. Brush this mixture generously over the tops of each roll.
Bake for 20–25 minutes, rotating the tray halfway through. The sausage rolls are done when the pastry is golden and puffed up.

Step Six: Cool and Serve
Allow the rolls to cool slightly before serving. They’re perfect on their own or served with your favorite dipping sauces (see my favorite options below)!

- Shape the FillingDivide the sausage mixture into four equal portions Spoon each portion onto each pastry, creating a long log, about the same length as the pastry strips. Place each sausage log along the center of a pastry strip.2 sheets puff pastry
- Seal the RollsFold the pastry over the sausage filling, overlaying it slightly. Dip your fingers in water and run that along the open seam of the pastry (to bind the pastry together). Roll the log until the pastry is seam side down.
- Cut into PortionsCut each pastry log into six equal pieces, about 2 inches each, making 24 rolls in total. Place the rolls seam-side down on a prepared baking sheet.
- Use a knife to cut 2 to 3 diagonal slits in the top of each piece. This allows steam to escape
- Brush and GarnishIn a small bowl, prepare the vegan egg wash by combining ingredients and stirring to combine. Brush the tops of each roll with this mixture.1 teaspoon vegan butter, 2 tablespoons plant-based milk, ½ teaspoon maple syrup
- Bake in the preheated oven for 20 to 25 minutes or until the pastry is golden brown and puffed. You may need to rotate the pan about halfway through baking to make sure the rolls bake evenly.
