- Prepare the Sausage MixtureIn a mixing bowl combine sausage and breadcrumbs. Stir together until well combined.2 cups vegan sausage, ¼ cup breadcrumbs
- Shape the FillingDivide the sausage mixture into four equal portions Spoon each portion onto each pastry, creating a long log, about the same length as the pastry strips. Place each sausage log along the center of a pastry strip.2 sheets puff pastry
- Seal the RollsFold the pastry over the sausage filling, overlaying it slightly. Dip your fingers in water and run that along the open seam of the pastry (to bind the pastry together). Roll the log until the pastry is seam side down. Ensure the seam is tight to prevent the filling from leaking during baking.
- Cut into PortionsUsing a sharp knife, cut each log into six even, 2-inch pieces for a total of 24 rolls. Place the rolls seam-side down on a prepared baking sheet.
- Cut 2 to 3 diagonal slits in the top of each piece. This allows steam to escape
