Diggin’ It

You know, I’ve done this Diggin’ It series before and I love getting to share with you what’s going on in our weeks, although sometimes it feels like…not much! But, this week? A lot’s been happening. We just wrapped up our third Chopped Academy Conference this week. It was uhhh-mazing!! So, here we go, Diggin’ It (9.24.16).

It was another amazing time at Chopped Academy 2016. I love seeing everyone and it’s all so incredible, but then there’s that moment. You know the moment after everything is packed up from the venue, loaded into the car, then unpacked at home, and you’ve changed into your comfy clothes and you’re sitting on the couch. Ahhhh. That’s how I felt. Just Ahhhhh.

And we watched episode four of Stranger Things.

Such an intense series. It takes my mind off of everything, including the rest of the unpacking I need to do after a conference I’ve been working on all year.

My bestie, Cara, asked us how in the world we’re able to watch one episode at at a time like that and I honestly don’t know how to answer her. We just do that. I guess it’s fun kind of spreading it out. Or maybe if we started earlier in the evening we’d have time to binge-watch.

On another subject, Adee went red this week. I confess, I wasn’t thrilled about it. She’s got the loveliest natural blond hair. The kind that people across the planet are coloring their hair to look like. But cuz I love her, and she loves her hair, I’m turning the corner into loving it too. She has a way, people.

If you’re wondering, that’s Emma Chapman of A Beautiful Mess. I know! She’s so amazing! Emma was one of the speakers at Chopped this year and Adee and I were both thrilled to meet her in person. I love meeting people who are just as interesting, cool, nice, and fun in person as they are online.

OK. Let’s talk food. Y’all, it’s like Fall came in overnight and all of a sudden I’m thinking about pumpkin. Sorry, but that might translate into pumpkin recipes coming your way very, very soon. 🙂

It’s kinda inevitable.

I told you earlier this week that I just haven’t been into long spurts in the kitchen. I’m sure it had to do with the conference. I’m sure I’ll get over it. I better. Otherwise, this blog is going to be full of friggin’ fast food. That’s not a bad thing though.

But anyways, I made this Vegan Chicken.

First of all… I love fig. There’s my Fig and Pecan Rustic Loaf that proves it. Even the word is awesome. I can walk around singing Getting Figgy Wid It. Shawn just stares at me like I grew a second head or something. Ha!

Almost Raw Chocolate Chunk Cashew Bites. Yes, please.

Also, Ali Ebright of Gimme Some Oven spoke at Chopped yesterday and she showed this Dove Video Clip, which is the most viewed ad ever. No wonder. It’s a reminder of how harsh we are on ourselves, and why we shouldn’t be. It makes me want to say — or YELL — Everyone is beautiful…in their own way!

That might make a nice song. Oh wait. Done!
