Having little snack stations is my favorite way to get people to mingle. I set out bowls of Cheerios Snack Mix in one area, Christmas Puppy Chow in another, and Gluten-Free Chex Mix in another.

I love to see people gathering around their favorite bowls and enjoying great conversation!

Ingredients

  • 1 cup vegan butter
  • 1 cup light brown sugar, packed
  • 42 salted saltine crackers (approximately 1 sleeve)
  • ¾ cup dairy-free chocolate chips
  • Other toppings: chopped nuts, crushed candy, or holiday sprinkles.

Instructions

Toasting Pecans

  1. Line a 15×10" baking dish with parchment paper. Preheat oven to 350°F/177°C.
  2. Spread the crackers in a single layer in the prepared pan.

For the Vegan Caramel Toffee:

  1. Add vegan butter and sugar to a large saucepan over medium-high heat. Stir frequently while it comes to a boil. (270 to 290 degrees if using a candy thermometer). Once it boils, reduce heat to medium and continue boiling for 5 minutes. You'll want to set a timer to get this exact. Stir occasionally.

  2. Remove from heat and carefully pour the caramel in an even layer over the crackers.

  3. Spread the caramel evenly over the crackers.

  4. Place the pan in the oven and bake for 5 minutes, (300 to 310°F if using a candy thermometer). Remove from oven and sprinkle chocolate chips on top.

  5. Let the chocolate sit for a couple of minutes, then use a spatula to spread the melted chocolate across the bars.

  6. Add additional toppings if you want while the chocolate is still soft. Use a spatula to gently press toppings into the soft chocolate.

  7. Chill in the fridge for 30 minutes. Then peel away the foil and break it into pieces.

  8. Store in an airtight container for up to 2 weeks.

      Hi Heather! You’ll be surprised how long this recipe can store…but for us it doesn’t usually last long. Haha. It will store a week to 10 days at room temperature. You can freeze it if you want it to last longer. I transfer them to a freezer-safe container. Please a sheet of parchment between layers to keep them from sticking. They’ll keep up to 3 months.

    A tip after trying vegan versions of this so many times & burning this batch. Don’t do the 5 min after it reaches 270-290. Every time I do this it separates or burns. Next time after 270 I’ll pour over crackers.
