  • Granulated Sugar: Plain white sugar is the way to go here!
  • Flax: We’ll use a simple vegan egg substitute, referred to as a flax egg. Purchase pre-ground flaxseed meal or grind whole flaxseeds in a spice grinder or blender. You can find it with the health food products in most grocery stores.
  • Freeze-dried Strawberries: These are the key to that intense strawberry flavor! Find them near other dried fruits in your supermarket. You can also purchase them online. If you can only find regular dried strawberries, those will work, but the flavor won’t be as vibrant.
  • All-Purpose Flour: This everyday baking staple is super versatile, and that’s what makes it perfect for these cookies.
  • Salt: Just a pinch enhances all the other flavors.

Ingredients

  • 1 cup vegan butter
  • 1 ¼ cups granulated sugar, , divided
  • 1 flax egg
  • 1 cup freeze-dried strawberry powder , divided (see notes)
  • 1 drop pink food coloring (optional)
  • 1 ¾ cups all-purpose flour
  • ¾ teaspoon salt
  • ½ teaspoon baking soda

Drizzle

  • 3 tablespoons powdered sugar
  • ½ teaspoon strawberry extract
  • 1 teaspoon soy milk

Instructions

  1. Preheat oven to 350°F/177°C. Line a baking sheet with parchment paper or silat.
  2. Combine butter and 1 cup of sugar in a mixing bowl and mix on medium-high speed until creamed, around 2 minutes.

  3. Add the flax egg and mix until just combined.
  4. Reserve one tablespoon of the strawberry powder. Add remaining strawberry powder and pink food coloring (if using) to the mixing bowl. Mix on low speed to combine.
  5. Whisk together flour, salt, and baking soda. Gradually add the flour to the dough. Mix on low speed until just combined.
  6. Combine the reserved sugar (1/4 cup) and reserved strawberry powder (1 tablespoon) to create a rolling mixture.
  7. Scoop dough and roll into balls. Roll the balls in the strawberry powder mixture. Place on a pan, roughly 2 inches apart.

  8. Bake in the center rack of the oven for 10 minutes. Remove from the oven and allow the cookies to set on the pan for 5 minutes, then transfer to a wire rack to cool completely.
