Here are the ingredients you’ll need for this recipe, including substitution ideas:

  • Medjool Dates: Opt for fresh, firm Medjool dates for the best results. Look for them in the produce section of your grocery store.
  • Peanut Butter: Choose natural peanut butter without added sugars or oils. Alternatively, almond butter or cashew butter can be substituted for a different flavor profile.
  • Peanut Butter Powder: This adds a boost of peanut flavor without extra calories. Find it in the nut butter aisle or health food section.
  • Roasted Peanuts: Use unsalted roasted peanuts for a crunchy texture. You can find them in the snack or bulk section of the store.
  • Dairy-Free Chocolate Chips: Look for high-quality dairy-free chocolate chips in the baking aisle. Brands like Enjoy Life or Hu Kitchen offer delicious options.
  • Coconut Oil: Opt for unrefined, virgin coconut oil for a subtle coconut flavor. It can be found in the oil or baking aisle of most grocery stores.

Buying Guide: When purchasing Medjool dates, ensure they are plump and moist, without any signs of drying or mold. Choose a package that feels soft and supple to the touch.

Marly’s Tips

  • For a quicker alternative, skip the homemade chocolate coating and simply drizzle melted dairy-free chocolate over the stuffed dates.
  • To prevent the chocolate from seizing, make sure the dates are completely dry before dipping them in the melted chocolate.

  • Cut a small, lengthwise slice in one of the dates and remove the pitt. Repeat with the remaining dates.
  • Stir together peanut butter and peanut butter powder. Add a teaspoon of this peanut butter mixture inside each date.
