How to Make Vegan Blondies

  1. Stir together the melted butter, sugars, applesauce, flax egg, and vanilla.

  2. In a separate bowl stir together the flour, baking powder, and salt. 
  3. Stir together the flour mixture and the butter mixture. Stir until combined (with no big clumps of flour).

  5. Add chocolate chips on top and use a spatula to lightly press them into the batter.
  6. Bake for 25 to 30 minutes until golden around the edges.

Storage Tips

Store leftovers in an airtight container. They will keep at room temperature for up to 4 or 5 days or in the fridge for up to 10 days. They can be frozen in freezer-safe containers for up to 2 months.

Do you want healthy vegan blondies? Drain a can of chickpeas and pulse them in a food processor until smooth. Then reduce the butter by half and substitute the chickpea mixture for the remaining half of the butter and the applesauce. Vegan chickpea blondies are surprisingly delicious!

  • Stir together the melted butter, sugars, applesauce, flax egg, and vanilla.
  • In a separate bowl stir together the flour, baking powder, and salt.
