When you’re new to a vegan lifestyle, the transition can seem a little difficult. Everything can feel overwhelming. That’s why I wanted to share with you my favorite Simple Vegan Recipes for Beginners — to let you know that vegan can be easy, affordable, and delicious!
The Secular Vegan
If you’ve committed yourself to a vegan or vegan-leaning diet, then I say, kudos to you! Welcome to the club! I call myself a Secular Vegan, because I’m not a dogmatic vegan. We’ve all met a few of those, right?
Well, I’m passionate about my diet and lifestyle, but I just don’t have it in me to be a zealot about it. I’m not a “my way or the high way” kind of person. For example, I’m a vegan and I eat honey. I’ve noticed quite a few plant-based diet gurus are fine with honey too.
I think being a Secular Vegan gives you permission to make incremental changes in your diet. That’s how I did it! First I went vegetarian, then over a period of years I gave up eggs, and then milk and butter, and then finally mozzarella. The was a tough one! Oh, and M&Ms.
But my taste buds have guided me along the way, because as I gave up certain foods (like milk), eventually I lost my taste buds for it. Now the taste of milk from a cow is really disgusting, but I love almond milk. Go figure!
Simple Vegan Recipes for Beginners
For sure, when you first start making your vegan recipes, it’s good to keep things simple. That’s why I created this round-up of simple vegan recipes for beginners, sharing some of my favorite, easiest, and tastiest recipes!
Below, I’m sharing everything from appetizers to main dishes, to desserts. It’s all covered. Oh, and this is only Part I! There will be more simple vegan recipes coming your way soon!

Easy Vegan Appetizers
I love this vegan queso dip, because it’s just five ingredients. I mean, you can always add Sriracha (if you love it spicy like me! 🔥).
This vegan ranch dip is perfect with veggies, but you can also dip potato chips and crackers in it too. And guess what? I love using it as a salad dressing. You’ll need some plain vegan yogurt (as in unsweetened) and I find that at our local health food store and Sprouts.
I wonder if I surprised you with this one! Who knew that a vegan pull-apart bread would be “easy”. But this recipe calls for a store-bought round loaf, making it a quick appetizer to pull together…and then pull-apart. 🙂
Easy Vegan Main Dish Recipes
I know, I know! You may look at this and say…that’s vegan! To which I would respond, yes it is! This is a super easy recipe, that sounds kind of fancy, but it will tempt your tastebuds while at the same tine not killing the calories.
When you’re in a hurry but you want something super delicious, these vegan chicken taquitos must be on your list! The ingredients come together so quickly and you’ll love the cheesy, creamy flavors as well.
I’ve made a variety of mac and cheese recipes over the years, but none of them as easy as this one! You just put everything in one pot and then around 30 minutes later, you’ve got a cheesy, delicious pot of mac and cheese.
OMG. I read about this super easy chopped cheese sandwich going viral in NY and so I veganized it. You’re welcome.
I want you to know that you can enjoy a perfectly plant-based (aka, minimal processed ingredients) dinner that is also filling and delicious as well. Here’s my Spicy Sesame Zoodles recipe as proof.
The hardest thing about this recipe is finding “eggless” noodles. My grocery store happens to have a store brand that carries egg-free wide noodles. You can also buy the Walmart brand (Best Value) of egg free wide noodles. Otherwise, this recipe is a breeze to make and reminiscent of your pre-vegetarian days.
You really must try this recipe, especially when you’re in the mood for an indulgent, comfort food kind of night! You’ll enjoy a veggie burger topped with veggie bacon, veggie cheese, and avocado slices. Heavenly!
You’ll love the savory, Italian flavors of this pasta, cooked with vegan Italian Sausage. If you wonder how you’ll find vegan Italian sausage, it’s now available at a variety of stores, including Sprouts, Walmart (produce section), health food stores, and even some grocery stores carry it as well.
Easy Vegan Sides
You can look at these as a side, but they can be a main dish a well. It’s entirely up to you!

A perfect side dish for almost any meal, this easy vegan corn casserole is a show-stopper on the table, but fairly easy to throw together!
Easy Vegan Breakfast
Breakfast is considered one of the most important meal of the day and one that is both fun and easy to veganize!
Shawn and I have some variation of this smoothie recipe, almost every day. We change it up to include berries, cocoa powder, peanut butter, pineapples, you name it! But this recipe is a great way to make sure you’re getting those greens in every day!
Creamy peanut butter combined with oats, chia seeds, and spices to make the perfect overnight oats recipe. Place this in the fridge the night before and wake up to delicious!
I love baking these vegan blackberry donuts on a Saturday morning, especially if we have guests in town! You’ll need a donut pan, but those are readily available.
This recipe is such a dilemma. It shouldn’t be so easy, and yet it is. You’ll look like a chef when you walk out of the kitchen with homemade vegan chocolate-filled croissants. Each fluffy piece of pastry is filled with dark chocolate and raspberries. The secret about how easy this recipe is can be something we keep between us. 😊

There’s a lot of desserts in this world, and not all of them are vegan or easy, the recipes that follow are both.
Think “chocolate” meets “easy” meets “healthy” in this easy vegan pudding recipe. It’s so easy to throw the ingredients together, you might even laugh! But you won’t be laughing when you’re eating each delicious bite!
You should find all the ingredients for this recipe at your local grocery story and you’ll have it ready in no time. This vegan vanilla parfait recipe is so easy, you might want to make a double batch!
The hardest part of this recipe is dipping the macaroons in the chocolate…and then waiting for it to set until you can eat them. This yields some very rich, flavorful cookies!
It took me several tries to get this recipe just right because I wanted an uber-easy vegan dessert recipe to share with you. This vegan chocolate peanut butter pie is just that — easy to make and fun to eat as well!
